“I’m thrilled to bring this unique six-course menu to Mirihi, showcasing dishes inspired by Oriole’s signature dishes plus originals that highlight the fresh, local ingredients that the Maldives have to offer,” said Chef Sandoval.

In addition to a multi-course culinary experience, Mirihi welcomes mixologist Julia Momosé to take over the bar program at Anba Bar, Mirihi’s part open-air bar with the largest selection of rum in the Maldives.

She will also be curating Mirihi’s in-villa 20th Anniversary Limited Edition Cocktail Kit, including local Muraka Rum and Maldivian ingredients.

Oriole was awarded two Michelin stars in the restaurant’s first eligible year and has retained two stars each successive year. About Chef Noah Sandoval
Noah Sandoval is chef and owner of Oriole, the acclaimed 2 Michelin-starred restaurant in Chicago’s West Loop. Sandoval’s passion for cooking began when he was a teenager: He was a dishwasher at Helen’s, a fine-dining restaurant in his native Richmond, Virginia when the chef offered Sandoval to try the food. It was the moment that separated before from after.
Since that day, cooking and hospitality have been Sandoval’s north star, training under chefs Shawn McClain, David Shannon, and Michael Carlson. He was the founding chef at Senza, the genre-breaking Chicago restaurant that was the first gluten-free restaurant to receive a Michelin star. Sandoval was named a Food & Wine’s Best New Chef in 2017, the same year Oriole began receiving and maintaining its 2 Michelin-star rating. His cooking has received four stars from both Chicago magazine and the Chicago Tribune. In his spare time, Sandoval is the guitarist for the post-rock band Porcini.

Her work has garnered international renown, from features in Time magazine, Esquire, and Food & Wine to a spot on the World’s 50 Best Bars. In addition, Momosé developed the cocktails and spirit free program for Starbucks Roastery Reserve, and her debut book The Way of the Cocktail was named one of the best cookbooks of 2021 from Vanity Fair and WIRED, and received a James Beard Award in 2022.
